Enjoy an exciting experience discovering the ancient Sardinian cheese-making tradition at a company leader in the dairy sector in Dolianova, near Cagliari, in southern Sardinia. Witness the age-old techniques and modern innovations that harmoniously blend to create exceptional flavors and textures. You will take part in a guided tour that will be a real journey through the history and secrets of Sardinian sheep's and goat's milk cheeses and witness the different production phases: milk analysis, the different recipes, salting in brine vats, maturing, and finally preparation, packaging, and shipping. You will be involved in an artisanal cheese-making workshop, with the possibility of creating the cheese and finally tasting it. In addition, at the end of the tour you will taste three of the farm's most famous cheeses accompanied by a glass of a local wine from the best wineries in Sardinia. For minors or those who do not like wine, water will be available.
The cheese-making workshop, run by experts, consists in the preparation of the cheese in an artisanal way, with the possibility of creating your own cheese and tasting it or taking it with you. An educational and fun experience that will allow you to discover the secrets of cheese making and its process step by step, from the coagulation of the milk, to the forming and salting.
